Meet Chelsea Radke | Owner & Head Pastry Chef
I grew up on a small farm in the Alberta prairies, where food was about gathering, sharing, and celebrating.
With over 25 years in the Hospitality Industry, I’ve dedicated my career to studying the art of connection—how thoughtful details transform an occasion into something unforgettable. In 2016, I blended that desire with my culinary training to create Black Dog Bakery, which has since evolved into Birch & Butter by Black Dog Bakery.
Baking is about creating experiences—desserts that become part of a celebration, a tradition, a memory. A wedding cake layered with love, a box of cookies meant for sharing, a sweet moment that lingers long after the last bite. My goal remains the same: to craft something that brings beauty, connection, and conversation to the table.

At Birch & Butter by Black Dog Bakery, every creation is designed with purpose. We love layered, refined flavours that surprise and delight. We love design with movement, texture, and intention. Most of all, we value the relationships we build—through our ingredients, our craft, and the people who welcome our work into their celebrations.
From wedding cakes to custom treats, DIY kits to hands-on workshops, our focus is on creating experiences that feel as special as the moments they’re made for.
Dessert is the final touch to a shared moment. It brings people together, marks milestones, and lingers in memory long after the last bite.
